Preparation
- In a medium bowl, combine the diced tomatoes, minced garlic, fresh basil, 1 tablespoon of olive oil, and salt and pepper to taste.
Toast the bread
- Preheat your oven to 375°F (190°C) and arrange the baguette slices on a baking sheet. Brush both sides of the bread with the remaining 1 tablespoon of olive oil.
Bake and Serve
- Bake for 8-10 minutes, or until golden brown and crispy. Once toasted, top the baguette slices with the tomato mixture. Drizzle with balsamic glaze, if desired, and serve immediately.
Notes
For extra flavor, you can lightly rub a peeled garlic clove over the toasted bread slices before adding the tomato mixture. Make sure to use ripe, juicy tomatoes for the best flavor.
