  • 2 medium chicken breasts, thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • salt and black pepper to taste

Method
 

Preparation
  1. Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
Cooking
  1. Sear chicken for 2-3 minutes per side until golden brown and cooked through, then remove and set aside.
  2. Add garlic to the skillet and sauté for 30 seconds until fragrant.
  3. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan; bring to a simmer.
  4. Stir in capers and return chicken to the skillet, spooning sauce over it.
  5. Garnish with fresh parsley before serving.

Notes

Serve immediately with pasta, rice, or a side of vegetables. For a richer sauce, add a splash of white wine with the chicken broth and lemon juice.
