Ingredients
  

Main Group
  • 3 cups Cooked Rice cold
  • 1 lb Shrimp peeled and deveined
  • 2 large Eggs whisked
  • 3 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 tbsp Vegetable Oil
  • 1 cup Peas and Carrots frozen
  • 3 Green Onions chopped
  • 2 Garlic minced
  • 1 tsp Ginger grated

  • Large Skillet or Wok
  • Spatula

Method
 

Main Group
  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and cook until pink, then remove from skillet.
  3. Add whisked eggs to the skillet and scramble until cooked, then remove.
  4. Sauté garlic, ginger, peas, and carrots for 2-3 minutes.
  5. Add cold rice to the skillet, breaking up any clumps, and stir-fry for a few minutes.
  6. Return shrimp and eggs to the skillet.
  7. Stir in soy sauce and sesame oil, mixing everything well.
  8. Garnish with chopped green onions before serving.

Notes

For best results, use day-old cold rice to prevent stickiness. You can adjust the amount of soy sauce to your taste.
