Ingredients
  

Vegetables
  • 2 medium carrots
  • 2 celery stalks
  • 2 medium potatoes
  • 14.5 oz canned diced tomatoes
  • 1 cup frozen mixed vegetables
Liquids & Seasoning
  • 4 cups vegetable broth
  • salt and pepper to taste

Method
 

Preparation
  1. Dice the carrots, celery, and potatoes into small, uniform pieces to ensure even cooking.
  2. Open the can of diced tomatoes and have them ready, along with the frozen mixed vegetables.
Cooking
  1. In a large pot, combine the diced carrots, celery, potatoes, canned diced tomatoes, and vegetable broth.
  2. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  3. Add the frozen mixed vegetables and cook for another 5 minutes, or until heated through.
  4. Season the soup with salt and pepper to your desired taste before serving.

Notes

For extra flavor, you can sauté the carrots and celery in a little olive oil before adding the broth. Feel free to add other vegetables you have on hand like zucchini or green beans. Serve with a side of crusty bread for a complete meal.
