Salad
  • 2 cups cooked chicken shredded or diced
  • 6 cups romaine lettuce chopped
  • 1 can (15 ounce) black beans rinsed and drained
  • 1 cup corn fresh or frozen and thawed
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 1 large avocado diced
Southwest Dressing
  • 0.5 cup plain Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Prepping the Salad
  1. In a large bowl, combine the shredded or diced cooked chicken, chopped romaine lettuce, rinsed and drained black beans, corn, halved cherry tomatoes, thinly sliced red onion, and diced avocado.
Making the Dressing
  1. In a small bowl, whisk together the plain Greek yogurt, lime juice, chili powder, cumin, garlic powder, salt, and black pepper until well combined.
Serving
  1. Pour the dressing over the salad ingredients and toss gently to coat. Serve immediately.

Notes

For extra crunch, consider adding crushed tortilla chips or toasted pepitas. You can also add a sprinkle of fresh cilantro for more flavor.
