Prepare the Chicken
- In a bowl, combine the olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper.

Make the Tzatziki Sauce
- In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and salt.
- Stir well to combine and refrigerate until ready to serve, allowing the flavors to meld.
Cook the Chicken
- Heat a large skillet or grill pan over medium-high heat.
- Add the marinated chicken and cook for 5-7 minutes, flipping occasionally until cooked through and slightly browned.
Assemble the Gyros (Traditional)
- Warm the pita bread according to package instructions.
- Spread a generous amount of tzatziki sauce on each pita.
- Fill with the cooked chicken, sliced tomatoes, red onion, and shredded lettuce, then fold or roll up.
Assemble the Gyros (Spicy)
- For a spicy gyro, add a pinch of red pepper flakes to the chicken marinade or sprinkle on top before serving.
Assemble the Gyros (Herbaceous)
- For an herbaceous gyro, mix fresh chopped parsley and mint into the tzatziki sauce or sprinkle over the assembled gyro.
Notes
For extra flavor, marinate the chicken overnight. You can also toast the pita bread lightly before serving for a crispier texture. Feel free to customize with other toppings like crumbled feta cheese, Kalamata olives, or hummus.
