  • 15 ounces canned chickpeas drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon ground cumin
  • 2-4 tablespoons cold water
  • salt to taste

  • olive oil
  • paprika
  • fresh parsley chopped

Method
 

Preparation
  1. Combine chickpeas, tahini, lemon juice, minced garlic, and cumin in a food processor, then process until smooth.
  2. While processing, slowly add cold water one tablespoon at a time until the desired creamy consistency is achieved.
  3. Season the hummus with salt to taste and pulse a few more times to incorporate.
Serving
  1. Transfer the homemade hummus to a serving bowl.
  2. Drizzle with a little olive oil and sprinkle with paprika and fresh chopped parsley, if desired.
  3. Serve immediately with pita bread, fresh vegetables, or your favorite dippers.

Notes

For an extra smooth hummus, remove the skins from the chickpeas before blending. Adjust lemon juice and garlic to your preference. This hummus can be stored in an airtight container in the refrigerator for up to 3-4 days.
