Preparation
- Chop cauliflower into rice-sized pieces using a food processor or grater. Finely mince garlic and ginger, then slice green onions.
Cooking
- Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the mixed vegetables and cook for 3-5 minutes until tender-crisp. Push vegetables to one side of the skillet.
- Crack eggs into the empty side of the skillet and scramble them until cooked through. Incorporate them with the vegetables.
- Stir in the cauliflower rice, soy sauce, and sesame oil. Cook for 5-7 minutes, tossing frequently, until the cauliflower is heated through and slightly tender.
- Garnish with sliced green onions and serve immediately.
Notes
For extra flavor, you can add a dash of fish sauce along with the soy sauce. Feel free to customize with your favorite vegetables or a protein like shrimp or chicken.
