  • 1 head Cauliflower
  • 2 Eggs
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 cup Mixed Vegetables
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 Green Onions
  • 1 tbsp Olive Oil

Method
 

Preparation
  1. Chop cauliflower into rice-sized pieces using a food processor or grater. Finely mince garlic and ginger, then slice green onions.
Cooking
  1. Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  2. Add the mixed vegetables and cook for 3-5 minutes until tender-crisp. Push vegetables to one side of the skillet.
  3. Crack eggs into the empty side of the skillet and scramble them until cooked through. Incorporate them with the vegetables.
  4. Stir in the cauliflower rice, soy sauce, and sesame oil. Cook for 5-7 minutes, tossing frequently, until the cauliflower is heated through and slightly tender.
  5. Garnish with sliced green onions and serve immediately.

Notes

For extra flavor, you can add a dash of fish sauce along with the soy sauce. Feel free to customize with your favorite vegetables or a protein like shrimp or chicken.
