Making the Patties
- In a large bowl, mash the rinsed and drained black beans until mostly smooth but still with some texture.
- Add the cooked brown rice, breadcrumbs, large egg, finely chopped onion, garlic powder, cumin, smoked paprika, salt, and black pepper to the mashed beans. Mix thoroughly to combine all ingredients.
- Divide the mixture into four equal portions and shape each into a patty about 1 inch thick.
Cooking the Patties
- Heat a large skillet over medium heat and add a tablespoon of olive oil. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
- Alternatively, preheat your oven to 375°F (190°C). Bake the patties for 20-25 minutes, flipping halfway through, until firm and lightly browned.
Assemble and Serve
- Lightly toast the burger buns if desired.
- Assemble the burgers with lettuce, tomato, red onion, pickles, and your favorite condiments.
Notes
For extra flavor, consider adding a dash of liquid smoke or a tablespoon of Worcestershire sauce (ensure it's vegan if needed) to the patty mixture. You can also experiment with different spices to customize the taste to your preference. These veggie burgers can be prepared in advance and stored in the refrigerator for up to 3 days, or frozen for longer storage. Reheat in a skillet or oven until warmed through.
