  • 15 ounces canned pumpkin puree
  • 2 large eggs
  • 0.5 cup vegetable oil

  • 0.5 cup chocolate chips optional
  • 0.5 cup chopped nuts optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it well.
Mix Dry Ingredients
  1. In a large bowl, whisk together the flour, granulated sugar, baking soda, pumpkin pie spice, and salt until well combined.
Combine Wet Ingredients
  1. In a separate medium bowl, whisk together the pumpkin puree, eggs, and vegetable oil until smooth.
Combine Wet and Dry Ingredients
  1. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Do not overmix.
Add Optional Mix-ins
  1. If desired, gently fold in chocolate chips or chopped nuts.
Bake
  1. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  2. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
Cool

Notes
