  • 1 tbsp olive oil
  • 8 count tortillas
  • 1 cup salsa
  • 0.5 cup sour cream
  • 1 lime cut into wedges

Method
 

Preparation
  1. Slice the chicken breast, bell peppers, and onion into thin strips.
  2. In a bowl, toss the sliced chicken with 1 tablespoon of fajita seasoning until evenly coated.
Cooking
  1. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add the seasoned chicken to the hot skillet and cook for 5-7 minutes until browned and cooked through, then remove from the skillet.
  3. Add the sliced bell peppers and onion to the same skillet, adding a little more oil if needed, and sauté for 5-7 minutes until tender-crisp.
  4. Return the cooked chicken to the skillet with the vegetables, sprinkle with the remaining 1 tablespoon of fajita seasoning, and stir to combine.
  5. Warm the tortillas according to package instructions, either in a microwave or a dry skillet.
Serving
  1. Serve the chicken and vegetable mixture in warm tortillas, garnished with salsa, sour cream, and lime wedges.

Notes

For extra flavor, marinate the chicken in fajita seasoning and a splash of lime juice for at least 30 minutes before cooking. Adjust the spice level by adding a pinch of cayenne pepper to the fajita seasoning. Feel free to add other toppings like guacamole or shredded cheese.
