Preparation
- Slice the chicken breast, bell peppers, and onion into thin strips.
- In a bowl, toss the sliced chicken with 1 tablespoon of fajita seasoning until evenly coated.
Cooking
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the seasoned chicken to the hot skillet and cook for 5-7 minutes until browned and cooked through, then remove from the skillet.
- Add the sliced bell peppers and onion to the same skillet, adding a little more oil if needed, and sauté for 5-7 minutes until tender-crisp.
- Return the cooked chicken to the skillet with the vegetables, sprinkle with the remaining 1 tablespoon of fajita seasoning, and stir to combine.
- Warm the tortillas according to package instructions, either in a microwave or a dry skillet.
Serving
- Serve the chicken and vegetable mixture in warm tortillas, garnished with salsa, sour cream, and lime wedges.
Notes
For extra flavor, marinate the chicken in fajita seasoning and a splash of lime juice for at least 30 minutes before cooking. Adjust the spice level by adding a pinch of cayenne pepper to the fajita seasoning. Feel free to add other toppings like guacamole or shredded cheese.
