For the Shrimp
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
For the Slaw
  • 3 cups coleslaw mix
  • 0.5 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp honey
  • 0.125 tsp salt
For Serving
  • 12 corn tortillas
  • 1 avocado, sliced
  • 0.25 cup fresh cilantro, chopped
  • 1 lime wedges

Method
 

Prepare the Shrimp
  1. Toss the peeled and deveined shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper in a medium bowl.
  2. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque.
Make the Slaw
  1. In a separate bowl, combine the coleslaw mix, Greek yogurt, lime juice, honey, and salt; mix well to coat the vegetables.
Assemble the Tacos
  1. Warm the corn tortillas according to package directions, either in a dry skillet, microwave, or oven.
  2. Fill each warm tortilla with a portion of the cooked shrimp and a generous spoonful of the prepared slaw.
  3. Garnish the tacos with sliced avocado, fresh cilantro, and a squeeze of lime juice from the wedges before serving.

Notes

For extra spice, add a pinch of cayenne pepper to the shrimp seasoning or a few dashes of hot sauce to the slaw. These tacos are best served immediately to enjoy the warmth of the shrimp and tortillas alongside the crispness of the slaw.
