  • 1 can Chickpeas rinsed and drained
  • 1 cup Quinoa uncooked
  • 1 medium Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 0.5 medium Red Onion thinly sliced
  • 0.25 cup Fresh Mint chopped
  • 1 large Lemon juiced
  • 2 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation
  1. Cook quinoa according to package directions, then set aside to cool.
  2. While quinoa cools, prepare your vegetables by dicing the cucumber, halving the cherry tomatoes, and thinly slicing the red onion.
  3. Chop the fresh mint and juice the lemon.
Assembly
  1. In a large bowl, combine the cooled quinoa, rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, and sliced red onion.
  2. Add the chopped mint, lemon juice, olive oil, salt, and black pepper to the bowl.
  3. Toss all ingredients together until well combined and coated with the dressing.
Serving
  1. Serve immediately for a fresh and vibrant meal, or chill in the refrigerator for later.

Notes
