Filling
  • 6 cups Fresh blueberries
  • 0.75 cup Granulated sugar
  • 0.25 cup All-purpose flour
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Unsalted butter
Egg Wash
  • 1 Egg
  • 1 tablespoon Water

Preparation
  1. Preheat your oven to 400°F (200°C) and place one pie crust into a 9-inch pie dish, pressing it gently into the bottom and sides.
  2. In a large bowl, combine the blueberries, sugar, flour, lemon zest, and lemon juice, then toss gently to coat the berries evenly.
Assembly and Baking
  1. Pour the blueberry mixture into the prepared pie crust, then dot the top with small pieces of butter.
  2. Carefully place the second pie crust over the filling, crimping the edges together with the bottom crust and cutting a few slits in the top for steam to escape.
  3. In a small bowl, whisk together the egg and water, then brush this mixture over the top crust for a golden finish.
  4. Bake for 40-50 minutes, or until the crust is golden brown and the filling is bubbly, then let the pie cool completely on a wire rack before slicing and serving.

Notes

For best results, use fresh, in-season blueberries. If using frozen blueberries, do not thaw them; add them directly to the mixture and add an extra tablespoon of flour to absorb excess moisture.
