  • 6 cups fresh or frozen peaches, peeled and sliced
  • 0.75 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
For the Topping
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, cold and cut into cubes
  • 0.5 cup milk
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. Preheat your oven to 375°F (190°C) and grab a 9x13 inch baking dish.
  2. In a large bowl, gently combine the peaches, sugar, flour, cinnamon, nutmeg, and lemon juice. Transfer this fruit mixture to your prepared baking dish.
Make the Topping
  1. In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the milk and vanilla extract just until a soft dough forms.
Assemble and Bake
  1. Drop spoonfuls of the dough evenly over the peach filling in the baking dish.
  2. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly. Let the cobbler cool slightly before serving.

Notes
