Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
- Pound the chicken breasts to an even thickness of about 1/2 inch, then season them with salt and pepper.
- Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for Panko mixed with Parmesan cheese.
Cooking
- Dredge each chicken breast in flour, then dip it in egg, and finally coat it thoroughly with the Panko-Parmesan mixture.
- Heat olive oil in a large skillet over medium-high heat and sear the breaded chicken for 2-3 minutes per side until golden brown.
- Transfer the seared chicken to the prepared baking dish, top each piece with marinara sauce and then a generous amount of mozzarella cheese.
Baking & Serving
- Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and lightly browned.
