- Heat vegetable oil in a large skillet or wok over medium-high heat, then add the beaten eggs and scramble until fully cooked; remove from the skillet and set aside.
- Add a bit more oil if needed, then stir-fry the diced carrots for 2-3 minutes until slightly tender, followed by the peas for another minute.
- Add the cooked chicken and day-old rice to the skillet, breaking up any clumps of rice, and stir-fry for 3-5 minutes until heated through.
- Pour in the soy sauce and sesame oil, tossing everything to combine evenly, ensuring the rice and chicken are well coated with the sauces.
- Return the scrambled eggs to the skillet, mix well, and then garnish with sliced green onions before serving hot.
Notes
For best results, use day-old cooked rice as it helps prevent the fried rice from becoming mushy. Feel free to adjust the amount of soy sauce to your taste. You can also add other vegetables like corn or bell peppers for more color and nutrition.
