  • 1.5 lbs boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery stalks, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt to taste
  • black pepper to taste
  • 1 cup egg noodles or rice cooked, optional
  • fresh parsley, chopped for garnish, optional

Method
 

Preparation
  1. Combine chicken breasts, chicken broth, chopped carrots, celery, onion, minced garlic, dried thyme, and bay leaf in your slow cooker.
  2. Season with salt and pepper to your taste.
Cooking
  1. Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is thoroughly cooked and tender.
Finishing
  1. Carefully remove the cooked chicken breasts from the slow cooker and shred them using two forks.
  2. Return the shredded chicken to the slow cooker and stir well.
  3. Remove and discard the bay leaf.
  4. If desired, stir in cooked egg noodles or rice during the last 30 minutes of cooking, or add them directly to individual servings.
  5. Serve hot and garnish with fresh parsley, if you like.

Notes

For extra flavor, you can lightly brown the chicken and vegetables in a pan before adding them to the slow cooker. This soup freezes well for future meals.
