Preparation
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, eggs, and vanilla extract; then gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
Frying
- Heat vegetable oil in a large, deep skillet or Dutch oven to 375°F (190°C), using a candy thermometer to monitor the temperature.
- Pour 1/2 to 3/4 cup of batter into a funnel, and while holding your finger over the bottom opening, move in a circular motion over the hot oil; release your finger, creating a spiral design.
Finishing
- Fry for about 1-2 minutes per side until golden brown, then carefully remove with tongs and place on a wire rack lined with paper towels to drain excess oil.
Notes
Ensure oil temperature is consistent for best results. For extra flavor, you can add a pinch of cinnamon to the batter.
