For the Crust
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
For the Filling
  • 2 8-ounce packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 3 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
For the Topping (Optional)

Method
 

Prepare the Crust
  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a 9-inch springform pan.
  2. Bake for 10 minutes, then remove from oven and let cool.
Make the Filling
  1. In a large bowl, beat cream cheese and sugar until smooth. Mix in pumpkin puree, eggs, sour cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.
  2. Pour the filling over the cooled crust in the springform pan.
Bake the Cheesecake
  1. Bake for 50-60 minutes, or until the center is almost set. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  2. Remove from oven and let cool completely on a wire rack. Refrigerate for at least 4 hours, or preferably overnight, before serving.
Serve
  1. Optionally, garnish with whipped cream and a cinnamon stick before serving.
