  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoons salt
Wet Ingredients
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

  • 1 cup fresh blueberries

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and line a 7-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
Mixing
  1. Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix.
  2. Gently fold in the fresh blueberries.
Baking
  1. Divide the batter evenly among the 7 muffin cups.
  2. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a little turbinado sugar on top of the muffins before baking.
