Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Peel and cut the sweet potatoes into 1-inch cubes and boil them in a large pot of salted water until tender, about 15-20 minutes, then drain well.
Mixing and Baking
- Mash the cooked sweet potatoes in a large bowl, then add sugar, milk, melted butter, beaten eggs, vanilla extract, and salt; mix until well combined.
- Pour the mixture into the prepared baking dish and bake for 25-30 minutes, or until the casserole is set and lightly golden on top.
Serving
- Remove from oven and let it cool for a few minutes before serving warm.
Notes
