  • 3 cups Cooked white rice (preferably day-old)
  • 1 lb Large shrimp (peeled and deveined)
  • 2 Eggs
  • 1 cup Frozen peas and carrots
  • 3 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cloves Garlic (minced)
  • 1 tsp Ginger (grated)
  • 2 Green onions (chopped)
  • 2 tbsp Vegetable oil

Method
 

Start Cooking
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes; remove shrimp and set aside.
  2. Add the remaining 1 tablespoon of vegetable oil to the skillet. Crack in the eggs and scramble until fully cooked; remove eggs and set aside.
  3. Add minced garlic and grated ginger to the skillet, stir-frying for about 30 seconds until fragrant.
  4. Stir in the frozen peas and carrots, cooking for 2-3 minutes.
  5. Add the cooked white rice, soy sauce, and sesame oil to the skillet, stirring to combine everything.
  6. Return the cooked shrimp and scrambled eggs to the skillet. Gently toss everything together until heated through.
  7. Stir in the chopped green onions just before serving. Serve immediately and enjoy your delicious shrimp fried rice!

Notes

For best results, use day-old rice as it tends to be drier and fries up better. You can also customize this recipe by adding other vegetables like bell peppers or corn.
