Start Cooking
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes; remove shrimp and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Crack in the eggs and scramble until fully cooked; remove eggs and set aside.
- Add minced garlic and grated ginger to the skillet, stir-frying for about 30 seconds until fragrant.
- Stir in the frozen peas and carrots, cooking for 2-3 minutes.
- Add the cooked white rice, soy sauce, and sesame oil to the skillet, stirring to combine everything.
- Return the cooked shrimp and scrambled eggs to the skillet. Gently toss everything together until heated through.
- Stir in the chopped green onions just before serving. Serve immediately and enjoy your delicious shrimp fried rice!
Notes
For best results, use day-old rice as it tends to be drier and fries up better. You can also customize this recipe by adding other vegetables like bell peppers or corn.
