Preparation
- Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onion and sauté for 5-7 minutes until softened.
- Stir in minced garlic, dried thyme, and dried rosemary, cooking for another minute until fragrant.
- Add cubed potatoes, canned diced tomatoes (undrained), and vegetable broth to the pot, then bring the mixture to a boil.
Cooking
- Reduce heat to low, cover the pot, and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Stir in green beans and corn, cooking for an additional 5-7 minutes until the vegetables are tender-crisp.
- Season the stew with salt and black pepper to taste, then ladle it into bowls and serve hot.
Notes
For extra protein, consider adding a can of drained and rinsed chickpeas or lentils during the last 10 minutes of cooking. This stew also tastes great with a dollop of Greek yogurt or a sprinkle of fresh parsley before serving.
