  • 3 Garlic cloves minced
  • 2 medium Potatoes peeled and cubed
  • 1 28-ounce can Canned diced tomatoes undrained
  • 4 cups Vegetable broth
  • 1 cup Green beans trimmed and cut
  • 1 cup Corn fresh or frozen
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt to taste
  • 0.25 teaspoon Black pepper to taste

Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onion and sauté for 5-7 minutes until softened.
  2. Stir in minced garlic, dried thyme, and dried rosemary, cooking for another minute until fragrant.
  3. Add cubed potatoes, canned diced tomatoes (undrained), and vegetable broth to the pot, then bring the mixture to a boil.
Cooking
  1. Reduce heat to low, cover the pot, and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  2. Stir in green beans and corn, cooking for an additional 5-7 minutes until the vegetables are tender-crisp.
  3. Season the stew with salt and black pepper to taste, then ladle it into bowls and serve hot.

Notes

For extra protein, consider adding a can of drained and rinsed chickpeas or lentils during the last 10 minutes of cooking. This stew also tastes great with a dollop of Greek yogurt or a sprinkle of fresh parsley before serving.
