Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt; set aside.
Mixing
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in any optional add-ins like chocolate chips or nuts.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
  2. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of cinnamon sugar on top of the cookies before baking. Do not overmix the dough, as this can lead to tough cookies.
