Ingredients

Main Ingredients
  • 3 large boneless, skinless chicken breasts
  • 2 tbsp blackening seasoning
  • 1 tbsp olive oil

Equipment

  • paper towels
  • cast-iron skillet
  • tongs
  • meat thermometer

Method

Preparation
  1. Pat the chicken breasts dry with paper towels; this helps the seasoning adhere and promotes a good sear.
Cooking
  1. Season both sides of each chicken breast generously with blackening seasoning, ensuring even coverage.
  2. Heat olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until it shimmers.
  3. Carefully place the seasoned chicken breasts in the hot skillet.
Blackening
  1. Cook for 3-5 minutes per side, or until the chicken is deeply browned and a crust has formed, and the internal temperature reaches 165°F (74°C).
  2. Remove the chicken from the skillet and let it rest for a few minutes before slicing or serving.

Notes

Adjust blackening seasoning to your spice preference. Serve with a side of rice, vegetables, or on top of a salad. For extra flavor, sprinkle with fresh chopped parsley before serving.
