Salad
  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 15 oz black beans rinsed and drained
  • 1 cup corn canned or frozen, thawed
  • 0.5 cup red onion diced
  • 0.5 cup cheddar cheese shredded
Dressing
  • 0.5 cup Greek yogurt
  • 0.25 cup salsa
  • 1 tbsp lime juice
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp garlic powder
  • salt and pepper to taste

Method
 

Cooking the Beef
  1. Brown the ground beef in a large skillet over medium-high heat, then drain any excess fat.
  2. Stir in the taco seasoning along with 1/4 cup of water, and simmer for 5-7 minutes until the liquid has reduced.
Preparing the Salad
  1. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, rinsed black beans, corn, diced red onion, and shredded cheddar cheese.
Making the Dressing
  1. In a small bowl, whisk together the Greek yogurt, salsa, lime juice, cumin, chili powder, garlic powder, salt, and pepper until smooth and well combined.
Assembling the Taco Salad
  1. Divide the prepared salad mixture among serving bowls, then top each with a generous portion of the seasoned ground beef.
  2. Drizzle each salad with the zesty Greek yogurt dressing just before serving.

Notes
