Grain Bowl
  • 1 cup cooked quinoa
  • 4 oz grilled chicken breast, sliced
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 0.25 cup corn kernels
  • 0.25 cup black beans, rinsed and drained
  • 0.5 avocado, diced
  • 2 tbsp feta cheese, crumbled
Lemon Herb Vinaigrette
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tsp Dijon mustard
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Preparation
  1. Cook quinoa according to package instructions.
  2. Grill or cook chicken breast until fully cooked, then slice it.
  3. Prepare all vegetables by halving cherry tomatoes, dicing cucumber, and draining black beans.
Assemble the Bowl
  1. In a large bowl, combine the cooked quinoa, sliced chicken, cherry tomatoes, diced cucumber, corn kernels, and black beans.
Prepare the Vinaigrette
  1. In a small bowl, whisk together the olive oil, lemon juice, fresh parsley, fresh dill, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the lemon herb vinaigrette over the grain bowl ingredients and toss gently to coat.

Notes
