  • 1 whole chicken
  • 4 tbsp butter, softened
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon, halved

Preparation
  1. Preheat your oven to 400°F (200°C) and pat the chicken dry with paper towels to ensure a crispy skin.
Seasoning
  1. In a small bowl, combine the softened butter, chopped rosemary, thyme, garlic powder, paprika, salt, and pepper, then rub this mixture evenly all over the chicken, including under the skin.
Roasting
  1. Place the halved lemon inside the chicken cavity and roast for 90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Resting
  1. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving to allow the juices to redistribute, ensuring a tender and moist result.

Notes

For extra flavor, you can add some onion wedges or carrots to the roasting pan alongside the chicken to roast with the drippings.
