  • 3 large Potatoes (Russet, Yukon Gold, Red) peeled and diced
  • 1 medium Onion diced
  • 2 Celery stalks diced
  • 3 Garlic cloves minced
  • 6 cups Chicken or vegetable broth
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • Salt to taste
  • Black pepper to taste
  • Fresh chives or parsley for garnish, chopped

Preparation
  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the diced onion and celery, cooking until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Sprinkle in the flour and cook for 1-2 minutes, stirring constantly to create a roux.
  5. Gradually whisk in the chicken or vegetable broth, ensuring no lumps remain.
  6. Add the diced potatoes to the pot and bring the mixture to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
  7. Once potatoes are tender, use a potato masher or immersion blender to partially mash some of the potatoes, leaving some chunks for texture. If using a regular blender, carefully blend about half of the soup and then return it to the pot.
  8. Stir in the milk and heavy cream, heating gently until warmed through. Do not boil after adding dairy.
  9. Season with salt and black pepper to taste.
  10. Ladle the soup into bowls and garnish with fresh chives or parsley, if desired. Serve hot.

Notes

For extra flavor, you can add cooked bacon bits or shredded cheese as a topping. This soup can be made ahead of time and reheats well. Adjust the consistency by adding more broth or milk if desired.
