Preparation
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
Cooking the Soup
- Pour in the canned diced tomatoes and vegetable broth. Bring the mixture to a simmer, then reduce heat and let it cook for 20 minutes, allowing the flavors to meld.
- Carefully transfer the hot soup to a blender or use an immersion blender to puree until smooth. Return the soup to the pot.
Finishing Touches
- Stir in the fresh basil leaves, salt, pepper, and sugar (if using). Heat for a few more minutes until the basil is slightly wilted. Serve hot.
Notes
For extra creaminess, stir in a splash of heavy cream or coconut milk at the end. Adjust seasonings to your personal preference.
