  • 2 cups chicken or vegetable broth

Method
 

Instructions
  1. Rinse the rice under cold water until the water runs clear, then melt butter or heat oil in a medium saucepan over medium heat.
  2. Add diced onion, if using, and sauté until softened, then add the rinsed rice and stir for 2-3 minutes until lightly toasted.
  3. Pour in the broth, season with salt and pepper, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed.
  4. Remove from heat, let stand for 5 minutes, then fluff with a fork and serve immediately.

Notes

For extra flavor, you can toast a small amount of vermicelli pasta or orzo with the rice before adding the broth. You can also add other vegetables like carrots or peas for added nutrition and color.
