Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Peel the sweet potatoes, cut them into 1-inch cubes, and place them in a large pot.
- Cover the potatoes with water, bring to a boil, then reduce heat and simmer until tender (15-20 minutes); drain well and mash.
- In a large bowl, combine the mashed sweet potatoes with melted butter, granulated sugar, brown sugar, beaten eggs, milk, vanilla extract, cinnamon, nutmeg, and salt; mix until smooth.
Topping
- In a separate bowl, whisk together the flour, brown sugar, and salt for the topping.
- Cut in the cold butter until the mixture resembles coarse crumbs, then stir in the chopped pecans.
- Spread the sweet potato mixture evenly into the prepared baking dish and sprinkle the pecan topping over it.
Baking
- Bake for 30 minutes, then loosely cover with foil to prevent over-browning of the topping.
- Continue baking for another 15 minutes, or until the casserole is heated through and the topping is golden brown.
- Let the casserole cool for a few minutes before serving.
Notes
For an extra touch of sweetness, a drizzle of maple syrup can be added to the sweet potato mixture. To make ahead, assemble the casserole and store it in the refrigerator for up to 2 days before baking; add an extra 10-15 minutes to the baking time if baking from cold.
