  • 1 packets Assorted vegetable seeds (carrots, celery, onions, tomatoes, potatoes, kale, peas) Choose varieties suitable for your climate.
For the Soup
  • 8 cups Freshly harvested vegetables Approximately 2 cups chopped of each type.
  • 2 tbsp Olive oil
  • 2 cloves Garlic Minced.
  • 6 cups Vegetable broth
  • 1 can (14.5 oz) Diced tomatoes
  • 1 Bay leaf
  • 0.5 tsp Dried thyme
  • 1 tsp Salt To taste.
  • 0.5 tsp Black pepper Freshly ground.
  • 0.25 cup Fresh parsley Chopped, for garnish.

Method
 

Growing the Vegetables
  1. Prepare your garden bed by loosening the soil and incorporating compost or aged manure to enrich it.
  2. Plant your chosen vegetable seeds according to package directions, ensuring adequate spacing and depth.
  3. Water regularly, especially during dry spells, and fertilize as needed based on plant requirements.
  4. Weed diligently to prevent competition for nutrients and sunlight, and monitor for pests and diseases.
  5. Harvest your vegetables when they are ripe and at their peak flavor, typically in the late summer or early fall.
Making the Soup
  1. Wash and chop all your harvested vegetables into bite-sized pieces, separating softer vegetables like tomatoes and kale.
  2. Heat olive oil in a large pot or Dutch oven over medium heat, then add the harder vegetables like carrots, celery, and onions.
  3. Cook the vegetables for 5-7 minutes until they begin to soften, then add the minced garlic and cook for another minute until fragrant.
  4. Pour in the vegetable broth and diced tomatoes, then add the bay leaf and dried thyme, bringing the mixture to a simmer.
  5. Add the potatoes and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Stir in the softer vegetables like kale and peas, cooking for an additional 5-10 minutes until they are tender-crisp.
  7. Season the soup with salt and freshly ground black pepper to taste, adjusting as needed.
  8. Remove the bay leaf before serving, then ladle the hot soup into bowls and garnish with fresh parsley.

Notes

For an extra flavor boost, roast some of the vegetables before adding them to the soup. You can also add your favorite herbs like rosemary or oregano for a different twist.
