Cake
- Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in grated carrots and optional nuts.
- Divide batter evenly between prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool cakes in pans for 10 minutes, then invert onto a wire rack to cool completely.
Cream Cheese Frosting
- In a large bowl, beat softened cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, beating until fully incorporated and smooth.
- Stir in vanilla extract.
- Once cakes are completely cool, frost the layers and top of the cake.
Notes
For best results, use freshly grated carrots. Do not overmix the batter, as this can lead to a dry cake. Ensure cream cheese and butter are softened to room temperature for smooth frosting. You can adjust the amount of cinnamon and nutmeg to your preference. Adding a pinch of ground ginger can enhance the spice flavor. For extra moisture, you can add 1/4 cup of crushed pineapple, well-drained. Garnish with chopped nuts or additional grated carrots if desired.
