  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Pumpkin Bar Instructions
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a large bowl, combine the granulated sugar, vegetable oil, eggs, and pumpkin puree, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined; do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean; let cool completely on a wire rack.
Cream Cheese Frosting Instructions
  1. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, mixing until fully incorporated and smooth.
  3. Stir in the vanilla extract until combined.
  4. Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top, then cut into bars and serve.

Notes

Ensure pumpkin puree is 100% pumpkin, not pumpkin pie filling. For a spiced frosting, add a pinch of cinnamon to the cream cheese frosting.
