Ingredients
  

Grain Bowl
  • 1 cup cooked quinoa or farro
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 0.5 can chickpeas, rinsed and drained
  • 0.5 avocado, sliced
Dressing
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Preparation
  1. Cook your preferred grain according to package instructions and set aside to cool slightly.
  2. In a small bowl, whisk together the lemon juice, olive oil, fresh dill, salt, and black pepper for the dressing.
Assembly
  1. Divide the cooked grain into two serving bowls.
  2. Top each bowl with halved cherry tomatoes, diced cucumber, rinsed chickpeas, and sliced avocado.
  3. Drizzle the prepared dressing generously over each grain bowl just before serving.
