Preparation
- Prepare the stir fry sauce by whisking together soy sauce, honey, grated ginger, and minced garlic in a small bowl.
- Cut the chicken breast into strips and slice the carrots and bell pepper.
Cooking
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken strips and cook until browned and cooked through, then remove from the skillet and set aside.
- Add broccoli, carrots, and bell pepper to the same skillet and stir-fry for 5-7 minutes until tender-crisp.
- Return the cooked chicken to the skillet, pour in the stir fry sauce, and toss to coat all ingredients.
Serving
- Cook until the sauce thickens slightly, about 2-3 minutes.
- Serve immediately over cooked rice.
Notes
Adjust the amount of honey to your sweetness preference. For extra spice, add a pinch of red pepper flakes to the sauce.
