Ingredients

Chicken
  • 7 large chicken breasts boneless, skinless
Marinade Ingredients (per recipe)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Grill
  • Resealable bags or shallow dishes
  • Meat thermometer
  • Tongs

Method

Preparation
  1. Pat chicken breasts dry with paper towels; this helps create a better sear.
  2. Prepare 7 different marinades, one for each chicken breast, using a variety of herbs, spices, and liquids.
  3. Place each chicken breast in a separate resealable bag or shallow dish with its marinade, ensuring the chicken is fully coated.
Marinating
  1. Refrigerate the marinating chicken for at least 30 minutes, or preferably 2-4 hours, to allow flavors to penetrate.
Grilling
  1. Preheat your grill to medium-high heat (about 200°C or 400°F) and lightly oil the grates to prevent sticking.
  2. Grill chicken breasts for 6-8 minutes per side, or until a thermometer inserted into the thickest part reads 74°C (165°F).
  3. Remove chicken from the grill and let it rest for 5 minutes before slicing, which allows juices to redistribute for a tender result.

Notes

Experiment with different marinades for variety, such as a balsamic herb marinade, a spicy chipotle lime marinade, or a Mediterranean-inspired one with feta and olives. For meal prep, cool chicken completely before storing in airtight containers for up to 4 days in the refrigerator or 2 months in the freezer.
