Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Prepare the potatoes by peeling and slicing them thinly, about 1/8 inch thick.
Making the Sauce
  1. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for one minute, whisking constantly.
  2. Gradually whisk in the milk until the mixture is smooth and thickened; then stir in the salt and pepper.
Assembly and Baking
  1. Arrange half of the sliced potatoes in the prepared baking dish and pour half of the sauce over them, spreading evenly.
  2. Sprinkle half of the shredded cheese over the sauce, then repeat with the remaining potatoes, sauce, and cheese.
  3. Bake for 60 minutes, or until the potatoes are tender and the top is golden brown and bubbly.

Notes

For extra flavor, you can add a pinch of nutmeg to the sauce. Ensure the potato slices are uniform for even cooking.
