  • 3 cups day-old cooked rice
  • 2 large eggs
  • 8 shrimp, peeled and deveined (optional)
  • 1 lb chicken breast, diced (optional)
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
For Cooking
  • 2 tbsp vegetable oil

Method
 

Preparation
  1. Prepare your ingredients by whisking the eggs, cutting any optional meat or seafood, and slicing the green onions.
  2. In a medium bowl, combine soy sauce, oyster sauce, and sesame oil to create the fried rice sauce.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
  2. Add eggs and scramble until fully cooked, then remove and set aside.
  3. If using, add shrimp or chicken to the wok and stir-fry until cooked through, then remove.
  4. Add remaining 1 tablespoon of vegetable oil, then throw in peas and carrots, stir-frying for 2-3 minutes.
  5. Add the day-old rice, breaking up any clumps, and stir-fry for 3-5 minutes until heated through and slightly crispy.
  6. Return the cooked eggs and optional meat/shrimp to the wok, pouring the prepared sauce over everything.
  7. Stir-fry for another 1-2 minutes, ensuring all ingredients are evenly coated and heated.
  8. Stir in sliced green onions just before serving.

Notes

For best results, always use day-old rice as it is drier and prevents the fried rice from becoming mushy. Adjust soy sauce to your taste. You can customize this recipe with other vegetables or proteins like ham or tofu.
