Pumpkin Bar Preparation
- Preheat oven to 350°F (175°C) and grease a 13x9 inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat the granulated sugar and eggs until light and fluffy.
- Stir in the pumpkin puree and vegetable oil into the wet ingredients until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
Cream Cheese Frosting Preparation
- In a medium bowl, beat the softened cream cheese and butter together until creamy.
- Gradually add the confectioners' sugar, beating until smooth. Stir in the vanilla extract.
- Once the pumpkin bars are completely cool, spread the frosting evenly over them. Cut into squares and serve.
Notes
For variations, consider adding chopped nuts, chocolate chips, or a hint of ginger to the batter. Ensure bars are completely cool before frosting to prevent melting. Store in an airtight container in the refrigerator.
