  • 1 cup cherry tomatoes
  • 1 medium red onion cut into 1-inch pieces
  • 8 ounces mushrooms whole or halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Combine zucchini, bell peppers, cherry tomatoes, red onion, and mushrooms in a large bowl.
Marinade and Assembly
  1. In a small bowl, whisk together olive oil, balsamic vinegar, oregano, garlic powder, salt, and pepper.
  2. Pour the marinade over the vegetables and toss to coat evenly.
  3. Thread the marinated vegetables onto the skewers, alternating the different types for visual appeal.
  4. Preheat your grill to medium-high heat.
Grilling
  1. Place the kabobs on the preheated grill.
