Preparation
- Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of coconut flakes and panko breadcrumbs.
- Take each shrimp, dredge it in flour, then dip in egg, and finally coat thoroughly with the coconut-panko mixture.
- Heat oil in a deep skillet or pot to 350°F (175°C).
Cooking
- Carefully place the coated shrimp into the hot oil, ensuring not to overcrowd the pan.
- Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the shrimp from the oil and place them on a wire rack lined with paper towels to drain excess oil.
Serving
- Serve the "grown" coconut shrimp immediately with your favorite dipping sauce.
Notes
For extra crispiness, you can double-coat the shrimp: after the first coating, dip them again in egg and then the coconut-panko mixture. Ensure the oil temperature is maintained to prevent soggy shrimp. Adjust seasoning to your preference.
