Preparation
- Preheat oven to 425°F (220°C) and grease five 6-ounce ramekins with butter and dust with cocoa powder.
- Melt butter and chocolate together in a double boiler or microwave until smooth, then set aside to cool.
- In a bowl, whisk eggs, egg yolks, and sugar until light and fluffy.
- Gradually fold in the cooled chocolate mixture into the egg mixture.
- Sift flour and salt into the batter and gently fold until just combined, being careful not to overmix.
Baking
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-14 minutes, or until the edges are set and center is still gooey.
- Carefully invert each cake onto a plate and serve immediately.
Notes
