Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2.25 teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 egg
Filling
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, softened
Cream Cheese Frosting
  • 2 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Method
 

Make the Dough
  1. In a large bowl, whisk together flour, sugar, yeast, and salt.
  2. In a separate microwave-safe bowl, heat milk until warm (105-115°F/40-46°C), then stir in melted butter and egg.
  3. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms, then knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Prepare the Filling and Shape Rolls
  1. While the dough rises, combine brown sugar and cinnamon in a small bowl.
  2. Once the dough has risen, punch it down and roll it into a 12x8 inch rectangle on a lightly floured surface.
  3. Spread the softened butter evenly over the dough, leaving a small border, then sprinkle the cinnamon-sugar mixture over the butter.
  4. Starting from a long side, tightly roll up the dough and pinch the seam to seal it.
  5. Cut the log into 4 equal pieces using a sharp knife or dental floss.
Bake the Cinnamon Rolls
  1. Preheat your oven to 375°F (190°C) and lightly grease a 8x8 inch baking dish.
  2. Place the cinnamon rolls, cut-side up, in the prepared baking dish, leaving some space between them.
  3. Cover the dish with plastic wrap or a clean kitchen towel and let them rise again for 20-30 minutes, or until noticeably puffy.
  4. Bake for 18-22 minutes, or until golden brown and cooked through.
Make the Frosting and Serve
  1. While the cinnamon rolls cool slightly, beat together softened cream cheese, powdered sugar, softened butter, vanilla extract, and milk in a medium bowl until smooth and creamy.
  2. Spread the frosting generously over the warm cinnamon rolls and serve immediately.

Notes

For best results, ensure your yeast is fresh and active. You can test it by mixing it with warm milk and a pinch of sugar; it should foam within 5-10 minutes. If you don't have a warm place for proofing, a slightly warmed oven (turned off) can work well.
