Preparation
- Preheat your oven to 375°F (190°C) and gently clean the mushrooms by wiping them with a damp cloth; carefully remove the stems and finely chop them, reserving the caps.
- Heat olive oil in a skillet over medium heat, then sauté the chopped mushroom stems and minced garlic until softened, setting this mixture aside for later.
Recipe 1: Classic Herb & Cheese
- In a bowl, combine the breadcrumbs, grated Parmesan, fresh parsley, softened cream cheese, and a third of the sautéed mushroom stem mixture.
- Fill eight mushroom caps with this mixture and arrange them on a baking sheet.
Recipe 2: Sausage & Spinach
- Cook the Italian sausage in the same skillet until browned, breaking it up as it cooks, then drain any excess fat.
- Stir in the fresh spinach, feta cheese, diced onion, and another third of the sautéed mushroom stem mixture, cooking until the spinach wilts.
- Stuff eight mushroom caps with the sausage and spinach mixture and place them on the baking sheet.
Recipe 3: Mediterranean Sun-Dried Tomato
- In a bowl, combine the chopped sun-dried tomatoes, crumbled goat cheese, fresh basil, toasted pine nuts, and the remaining sautéed mushroom stem mixture.
- Fill the last eight mushroom caps with this Mediterranean mixture and add them to the baking sheet.
Baking & Serving
- Bake all the stuffed mushrooms for 20-25 minutes, or until the caps are tender and the fillings are golden brown and heated through.
- Serve the stuffed mushrooms immediately as an appetizer or side dish.
Notes
Feel free to mix and match fillings or adjust seasonings to your preference. These stuffed mushrooms can be prepared a few hours in advance and baked just before serving. Ensure mushrooms are dry before stuffing to prevent sogginess. For extra flavor, sprinkle a little extra cheese on top before baking.
