  • 1 cucumber diced
  • 1.5 cups cherry tomatoes halved
  • 0.5 red onion thinly sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Serving
  • 3 cups cooked quinoa or rice
  • 0.75 cup tzatziki sauce
  • fresh parsley chopped for garnish

Method
 

Preparation
  1. Cut chicken breast into 1-inch pieces and combine with olive oil, lemon juice, oregano, salt, and pepper in a bowl.
  2. Marinate the chicken for at least 15 minutes, or up to 30 minutes for more flavor.
Cooking
  1. Heat a large skillet over medium-high heat and cook the marinated chicken for 5-7 minutes until browned and cooked through.
  2. While chicken cooks, prepare the salad mixture by combining diced cucumber, halved cherry tomatoes, thinly sliced red onion, and crumbled feta cheese in a separate bowl.
Assembly
  1. Divide cooked quinoa or rice among three serving bowls, then top each with cooked chicken and the prepared salad mixture.
  2. Drizzle each bowl generously with tzatziki sauce and garnish with fresh parsley before serving.

Notes

For an extra touch, you can add Kalamata olives to the salad mix or a squeeze of fresh lemon juice over the finished bowls.
