Ingredients
  

Dough
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 1 cup milk, warm
  • 1/4 cup unsalted butter, melted
  • 1 egg
Filling
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
Cream Cheese Frosting
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Method
 

Dough Preparation
  1. In a large bowl, combine flour, sugar, yeast, and salt, then warm milk, melted butter, and an egg.
  2. Mix until a shaggy dough forms, then knead on a floured surface for 5-7 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Assembly
  1. Punch down the risen dough and roll it into a 12x18-inch rectangle on a lightly floured surface.
  2. In a small bowl, mix softened butter, brown sugar, and cinnamon to create the filling, then spread it evenly over the dough.
  3. Roll the dough tightly from the long side and cut into 12 equal slices.
Baking
  1. Place the slices in a greased 9x13-inch baking dish, cover, and let rise for another 30 minutes.
  2. Preheat oven to 375°F (190°C) and bake for 20-25 minutes, until golden brown.
Frosting
  1. While the rolls bake, beat softened cream cheese and butter until creamy, then gradually add powdered sugar, vanilla extract, and milk until smooth.
  2. Once the cinnamon rolls are out of the oven, spread the frosting generously over them while still warm.

Notes

For extra fluffy rolls, ensure your milk is warm (about 105-115°F or 40-46°C) but not too hot, as it can kill the yeast. You can also prepare the rolls the night before and refrigerate them after the second rise; just let them come to room temperature for 30 minutes before baking in the morning.
