Ingredients
  

Main Ingredients
  • 400 g pasta
  • 180 g pesto
  • 50 g Parmesan cheese grated
  • 200 g cherry tomatoes halved
  • 30 g pine nuts toasted
  • a handful fresh basil leaves for garnish
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

Method
 

Cooking Instructions
  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
  2. While the pasta is cooking, toast the pine nuts in a dry pan over medium heat until golden brown.
  3. Drain the pasta, reserving about half a cup of the pasta water.
  4. In a large bowl, combine the cooked pasta, pesto, halved cherry tomatoes, toasted pine nuts, and grated Parmesan cheese.
  5. Add a splash of the reserved pasta water to achieve a creamy consistency, then drizzle with olive oil and season with salt and pepper to taste.
  6. Garnish with fresh basil leaves and serve immediately.

Notes

For an extra boost of flavor, consider making your own pesto from scratch. You can also add grilled chicken or shrimp for a more substantial meal.
